Cooking Tips
  Buffalo tastes great! It is naturally flavorful and can be prepared much the same as beef. It is healthy because it is not subjected to questionable drugs, chemicals, or hormones. Nutritionally, you are getting more protein and nutrients with fewer calories and less fat.
 
Burgers
  Ground buffalo meat is without the traditional fat you find in ground beef, so it can be overcooked quickly. To prevent overcooking, you may want to move your BBQ or broiler rack further away from the heat source as well as turning down the heat and shortening the cooking time. (HINT: thicker burgers will be juicier. We suggest using at least 1/3 lb. per burger.)
 
Steaks
  Buffalo steaks are also very lean and are done when rare to medium. They can be marinated or try a combination of a little garlic salt, cooking oil, and lemon pepper and rub it on your steak before grilling. Grill steaks 4-6 inches above medium hot coals (325 degrees) for the following times:
    1" Rare: 6-8 min. Medium: 8-10 min.
    1.5" Rare: 8-10 min. Medium: 10-12 min.
    2" Rare: 10-12 min. Medium: 14-18 min.
  A good rule when grilling lean meat is to "Think Pink!"
 
Roasts
  Buffalo roasts are great in the crock pot all day on the low setting, or can be cooked in the oven at 200-225 degrees for 6-8 hours (supervision required for the oven method). Whatever way you decide, you will want to add some type of moisture such as soup, broth, water or your favorite spices. Remember to cook them LOW and SLOW.
