Bison Round Steak

Cut steak into serving size pieces. Dip in beaten egg and then into finely crushed cracker crumbs. Brown in hot oil just till browned. Place in baking dish or pan. Add 1 or 2 cups chicken broth or water to browning skillet. Loosen all the good stuff in the skillet and pour over the steak. Cover tightly with foil and bake at 250 degrees approximately 2 hours per pound. This steak will melt in your mouth and can be served with mashed potatoes or pasta.
